I was going to ask you in the FOOD thread what that was because it looked so GOOD.

What's the specks?
I marinated it over night in soy sauce, lemon juice, olive oil (extra virgin), oyster sauce, backing soda,corn starch, brown sugar, garlic, salt and pepper.
Some people put vinegar but, I always tend to use too much so, I don't use it any more.
Then, seared it on the grill at about 450*. Rest about 10 minutes.

It was good. I used a 1/4 cup of brown sugar, a bit sweet. Next time I do it, I`ll use a little less.
You can see on the sides the sugar burned a little bit.

2 TBS - backing soda, 1 TBS - corn starch, 1/4 cup - brown sugar, 4 cloves smashed garlic,
1 tsp - salt and 1 tsp - pepper. Ziploc bag in the fridge for min 3 hours (I did 24) then, sear 2 to 3 min a side.
Temp about 125.
