Put a vacum gauge to the manifold. I you have vacum at WOT the carb is too small. Then you can post in the engine section about how to fix your 750.

i've got a 750 on my 402, but the throttle is kinda lazy on it, at least it was before i changed my cam and valve train. i've yet to run it with the new valve train but if you listen to the video below that was from idle to rougly 5500 rpm. 10.1 motor roughly spin it to 7K.
