With the gas pedal to the boards on the brake the converter stalls 5000rpm. On the 3 step, say at 3500rpm it should flash a bit higher when the brake is released, correct, I hope?

yes, if it goes to 5000 on the brake then it will flash to 5000 or so on a low rpm launch.
