This is a dressing/ stuffing for any gamy tasting foul. It is more of a custard or bread pudding than your standard stuffings. It sounds yucky when you make it, but it turns a wild goose into a wet dream. The ingredients are Goose cleaned and soaked in saltwater over night. A loaf of French bread torn in small pieces, Sugar, salt Eggs, milk, box of raisins, Johnathon apples sliced thin and pealed and real butter.
In a large bowl put bread milk to get it all soggy then around 4 eggs depending on size(not too particular here), Now the trick, You dump sugar in it till you can't stand the taste (1 1/2 cup or so), then you salt it till you can't stand the salt taste, (don't worry) then apples about 4 for a loaf and matching amount of raisins. If you like dried cranberry's can be added. Then slice off a stick of butter in it. mush this up with your hands. and stuff goose. This comes out like a bread pudding but the taste of the goose, turkey, duck is what it's about. It takes the wild taste out. Make sure you stuff neck and any left over can be put in a baking dish and baked with bird for last 30 40 minutes. A cooking bag works for me, I slice it open to get golden brown for last 15-20 minutes.
