I bought my smoker about 2 months ago, propane fired made by Smoke Hollow. Ive done pretty much all pork till now mostly tenderloin and ribs. My birthday is on Monday 8/11 and some good friends of ours have been wanting me to smoke something for them to try. So as a birthday gift they said they would buy the brisket if I smoke it. DEAL! I have been researching recipies all week and settled on a texas style rub. Im using a 2:1 mix of hickory and apple wood, mainly because that's what I had here. The apple wood has been awesome with the pork. My little twist is since im a Pennsylvania ******* and beer goes with everything I make, I put a can of beer in my water pan with some water of course. Not just any beer, the best damn beer on earth YUENGLING.. Will see how it turns out. Only about 3-4 hours to go. I also made some of my mommas BADASS coleslaw and I am going to pile it on top of my brisket that I am going to pile on a fresh Keiser roll. Has anyone ever tried it that way?
