GF wants scallops for her birthday dinner this weekend. I got scallops, they're effortless. But what do I do for a side dish?

We stay away from grain/rice/starch, so that limits my options. My first thought was wilted greens of some sort, but that's all I got.

Any ideas?

roasted brussel sprouts, cauliflower, butternut squash

sauteed or roasted green beans

asparagus with a light lemon buter sauce along with a fresh/light/fruit esk dressing
I thought for sure you knew the captain of the ship that caught the scallops..............

oh and brussel sprouts go good we did this Tuesday night

Thanks for the responses so far......except cepx111, not you.:cool:

I'm leaning towards asparagus at this point. I guess I was looking for something different since we eat a ton of asparagus normally, but rarely scallops. Seems like a good fit.

We're going to her family's place in the mountains, so I've got a Weber and a stove to work with. A little limited, but I don't use the oven that much anyway.

Spinach salad with hot bacon dressing.

Roast butternut squash with extra virgin olive oil, sea salt and cracked pepper. Drizzle with top shelf balsamic vinegar, top with parmigiano reggiano shavings. Again use the real stuff. Incredible difference.
