I just finished putting the fresh motor back in the car (416 LS). The radiator took a little over a gallon. I started it and let it warm up to 195 and shut it off to let it drink some more coolant. I let it sit and it really didnt drink much more coolant. After letting it cool off for a little bit, I started it up and idled until it got to 180 degrees and shut it off again. It still didnt drink any coolant so I figured there must be an air lock or something. I popped off a coolant crossover line and it started guzzling it down. I put the line back on and it drank another 1.5 gallons or so.

Did I cause potential damage to the new rings, etc. because I basically ran the motor with no coolant in it?

I woudlnt think so. If it got real hot and stayed hot, it would start to push a little water in your overflow most times.

You could also do a compression or leak down test to make sure all cylinders are close.
