You CAN absolutely do Limp configs. Set outputst activate your rpm limit If certain thresholds are reached.

There's various actions if a sensor fails (map, CTS, etc). Drive by wire has it's own set. Caution and warning outputs are very programmable.

As far as running the engine on 4 cylinders and OEM stuff like that, no.

Its possible with dual relays for coil/injector power and kill these... But why
