Egt's are nothing more than a tool to use once you have the plugs looking like you want them.

One person's egts will not equal anothers.

Make the motor happy buy giving it the fuel it wants and reading the spark plugs for burn and timing. Then use the EGTs as a reference.
The only thing I would add is if your EGT has more then about 100 degrees from 1 cylinder to another I would swap thermocouples and see it is stays the same or goes with the thermocouple. At least that way you know what your equipment is seeing.
