I'll add a few. Transmission pressures - main system and outlet pressure. I run a turbo so I also do ambient air temp (turbo inlet), turbo discharge temp (pre-intercooler), air inlet temp (post turbocharger) and final air temp (sensor located downstream of my E85 injectors). For a NA application I would consider having a temp probe near the carb/throttle body inlet.

Oil temps has been mentioned. Don't overlook this. You should have an engine oil temp and use it to verify it reaches a safe minimum temp before making a pass. I don't datalog it though, it changes so slowly it's best to have it on a cockpit gauge.

If you were starting with a new build and had nothing, Fueltech has a dash that will run everything. If you bought the smart coils, wouldn't have to buy hardly anything else. Ignition box, data recorder, delay box, and all of it can be operated and adjusted from the dashboard sitting in the seat. Don't know exactly how much it costs, but it's probably less than you'd pay for the stuff from 4 or 5 different manufacturers. Price a tach and a bunch of gauges lately???!!!! holy crap!
I'm not familiar with the Fueltech dash you're referring to. My perception is it must not be very powerful if you can "run everything" from the dash.

The smart coils are the muscle of the ignition, the way I understand it
Absolutely smart coils are much better than a using any ignition system and distributor. BuT to tune a combination that runs fast it's more important to control everything. And regarding datalogging, I can't imagine not having a log file and viewing it on a laptop.

Just keep in mind with a good ECU you can log at selected rates, some of which are faster options. The NEXUS R5 will log as fast as 1mS and as slow as 100mS (microseconds). This is a nice option because you want some data at the fast rate (switches) but things that change slowly (like temperature) you want at slow rates.
