I had some left over roast beef so I decided to make some beef flautas, so good!

I sliced and sauteed some jalapeno peppers n onions to add in the mix, placed the roast beef in a small flour tortilla, add grilled onion and jalapeno, roll up, pin with a couple tooth pics and deep fry until golden brown, cover with white jalapeno queso cheese sauce ( mexican white cheese dip ).

Interesting, can you tell us more, I have no clue what achiote is?

It's ground up annatto seeds along with some other spices. It comes in a little brick, and is used as a base in a lot of Mexican dishes. Chorizo, al pastorc, etc.

I blend it up with the juice of 1 lime or orange and a little Olive oil.

You my not be able to get it if you don't have a Mexican grocery store near by, but you can buy it on Amazon as well.

Also, that same brand, El Yucateco, has some really good hot sauces. They make a blackened habenero hot sauce that's killer, and it's dirt cheap if you have a Mexican grocery.
