i've been reading on the differences in the 8.8 rears from fox bodies, 94-98, and 99-04 as I prepare to get mine done up over winter.

On my '00 GT I am goint to do a gear, spool, axles, and c-clip elims.
While it is being done I would like to get it narrowed a small amount to tuck my current wheels by 1/2-3/4" per side

I am no longer running ABS on the car so there is nothing needed there.
Would the easiest option be to get a 94-98 housing (which I have read is narrower) get that built and swap my brakes on?

or any other options I could do?

If you are just doing c-clip eliminators then it sounds like the 94-98 housing will be perfect for you. If you are going to do 9"ends though then it doesn't really matter what housing you start with.

I currently have 15x10 6.5bs wheels with 325/15 MT drag radials

They rub a little bit on the outer edge with it rolled flat
but I still have about 1.25" in the back that it can go in
I'd like to move it in an 1" or so

I ended up putting in an SN95 rear (94-98)
Made it exactily where I wanted it with the wheel/tire combo I am running!
This is a 325 MT with plenty of room on the stock inner fenders
