what would be the widest tire I can get away with on a 8.5 19" wheel I am considering 285/40/19

It kinda depends on how tall you want to go as well.

I can tell you that the widest "40R19" you can put on an 8.5" rim is a "255". However, that tire will be about an inch shorter in diameter.

A P255/45R19 will keep the height about the same.
