Any of you with a Weber smoky mountain.........I tried boiling some peanuts in my water pan , wasn't so sure about it just wanted to see if they would pick up some of the smoke flavor from the hickory......used water,chicken boullion,hot pepper flakes and some thyme like usual when I boil them over the jet burner......they turned out great, better than I expected......was about a two hour process with the lid on it.

I can see me doing that often.......they weren't too smoky( was my fear) and the process was easy.....highly reccomend to any of you that like boiled peanuts.

Japanese BBQ





Had Asian BBQ in both Korea and Japan, both are quite good with subtle differences. Fell in love with Asian BBQ the very first time I had it. Was in Soul Korea and a guy with huge mittens brought out a ceramic bowl full of coals and placed it in the middle of the table. It had a very ornate griddle top with a dragon on it. Talk about presentation!! And on top of that delicious and cooked in front of you.

Two main differences between Japanese BBQ and Korean BBQ is the Koreans marinate the meat before grilling while the Japanese use sauces afterwards for dipping. Also the Japanese will cut it up into bit sized pieces while the Koreans will use scissors to cut it for you after cooking. Both mainly use gas grills with a downdraft ventilation system but the Japanese will also use hot rocks that you cook on at the table. Fun meal. I cheated and grilled it on my Weber.

Started out looking like this............



Ended up looking like this...........





Beef Rib, Pork Belly, Shrimp (5 to a pound) Oyster Mushrooms and Long Beans.



Tempura Long Beans (Your basic Tempura batter and deep fried)



Oyster Mushrooms (Just Corn Starch dredged and fried, but absolutely delicious especially if you dip them in Ranch Dressing)



Best tasting Shrimp I have had in a long time and perhaps ever. They call these "Deep Water Shrimp" and they just melt in you mouth. Cooking them whole really adds a lot of flavor.

To each his own, but for my tastes one of the better meals I've made lately.

Quite good. Beer Batter British Pub Fish n Chips.

Basic Beer Batter, Cod, etc. Came out better than what I had in London, for sure. Maybe it was the places we went but I thought the food was OK, the fish I had there was super greasy.

Smoked Salmon Steaks

One of two of my favorite ways of making Salmon.

Brined 4 hours using Tenderquick. What I found is the amounts on the bag are a little much for fish, Ok for meat, so I cut it down by about a third plus only brined it a minimal amount of time. That seems to work best.





Then smoked it using Mesquite just to flavor it, not cook it. Couple big handfuls of Mesquite in my electric smoker At 225 degrees, once it got smoking real good you put a glass on the vent and let it smoke about 5 minutes.





Then bag it will Dill, Lemon and Olive Oil n put it in the fridge till your ready to eat.



When you are ready to eat, throw it on the grill and do not overcook. Just color and let it rest about 5 minutes.



If you didn't overcook (120-125 internal temp) the best Salmon I know of. Melts in your mouth are the key words.

The broccoli rabe and purple vagina go great as the sides.......kidding aside, looks like a great meal.

Like the pre smoking method is nice.

Just got lucky. 😋 Sautéed broccoli just using garlic n olive oil is pretty killer. Add bacon or Pancetta, n you got a genuine chophouse expensive meal side. No dope. Ten to thirteen dollars later, plus a real chophouse quality drink, nothing but smiles. Remember, a picture is a thousand words. I got it.

Now Monty will come on with some baked bread.😈 Throw shit on top n call it pizza.

Pretty much a standard summer meal.

Grilled Swordfish with Watermelon Pica de Gallo, Grilled Summer Squash, Basil/Garlic Couscous and Heirloom Tomato with Basil and Bacon.




Swordfish that was brined, grilled on my gas Weber, served with Cilantro Lime butter. Colored and allowed to rest about 10 minutes in a 170 degree oven to even out the heat.
