Default Air to fuel and timing map thoughts

I have a 1993 Foxbody with twin s372 and a 383 sbf. I dont have the exact cam measurements but it’s a solid roller with 700 lift and heavily ported Victor jr heads.

Can I get some opinions on both my maps?

They look like a good starting point to me.
What fuel?
On e85 and m1, I don't pull any timing till 8psi.

E98 actually. I made 1285 at 22lbs of boost. I was thinking the timing is a little low
