....the brisket

Spend the extra money for a good cover if you are going to keep it outside.

All my grills have good covers....whether outside or not. As long as we're on subject, though, the $79.00 cover that Campchef recommends for this setup, comes as a "universal" that fits like a 4 finger glove. Yes, it does cover it, but it's like a seamstress telling the bride to be that although she is a size 10, this size 9 will make you look just fine. Lovin' the grill....the cover, not so much.

Looks like a busted can of biscuits, lol.....cool that the grill does what you want.
I just picked up another traeger for about 1/2 price of retail from a guy that won it through his work, my wife gave me the look.
Not sure if it's an option on that grill but on the traeger you mount the stack on the side and I've turned the stacks upside down and tucked them along side the grill facing down instead of the upright chimney stack.....this will be our third one and the plan is to do the same when we put it together and start using it......it looks cool and it travels better.

I did it on my first one trying to figure out the simple smoke, medium, high thermostat they came with back then....the thing would go out on the smoke setting when it was windy outside so I turned the stack upside down along side the grill body thinking it would cut down on the draft coming into the chimney sticking above the grill....the new thermostats fix all that with more precise temp control but the stack facing down looks unique and it just stuck.....oh, and where I was going with all of that is that it made the universal covers fit pretty nicely.

Just a heads up on covering grill/smokers for extended periods of time.

I uncovered my offset smoker for the first last week, it had been under a fitted waterproof cover all winter long, I was shocked to find mold all over everything on the inside, it was beyond gross, I ended up throwing some of the internal stuff away it was so bad, rusty, moldy grill grates gone bye bye, extended aluminum down pipe, see ya, I left it uncovered and open to let the sun dry things out real good before I give it a thorough cleaning.

I learned my lesson, even if I'm not gonna use it, I will from now on, uncover them from time to time to let them air out to keep the moisture down.

That brisket looks amazing BTW.

A few years back, after having major surgery, we didn't go our to our weekend place for some months. When we finally did and I uncovered the Big Green Egg, it was indeed green. Every part of it was green....mold and other cooties...even the leftover lump charcoal was covered. A good, long, high-heat fire got everything back to normal, though. After that, I rigged up a couple of vents in the heavy cover and made sure to keep the top and bottom open so air can circulate a bit.

You could've just burned it off. That happens sometime with my Weber smokers. The whole inside of the smoker will be green and grey with mold. Grates, water pan, everything. I just scrub it good and then get a fire going to take care of anything inside the body of the smoker. The grates I burn off on the gas grill, wire brush and reseason with oil. No way anything will be alive by the time they come up to temp.

My dad said the same thing, myself though, I didn't feel comfortable just burning it off, it was bad, really bad, the smoker needed a thorough cleaning anyway, so this was just my excuse, and as far as the grates go, they were the cheap thin metal grates that came with the grill, I want to make some out of thicker stainless steel expanded metal mess and be done with it.

Oh contraire mon frere, the hashbrowns were done to my desired done~ness, and the pic was taken prior to final seasoning, rest assured everything was covered in black pepper along with a sprinkle or two of some fine sea salt shortly there after.

This was good, even though I didn't make it, sometimes it's nice to be lazy and catered too.

Beef stuffed chile relleno covered in poblano pepper queso sauce, cheese & onion enchilada with red chile sauce, double order of Spanish rice and one crunchy beef taco on the side, because I didn't the first two were gonna be enough.

My wife's plate, 3 bacon wrapped jalapeno & cheese stuffed colossal shrimp, two 4 oz tenderloin steak medallions ( med rare ), cheese pappas and charro beans.
