7" Dash included in Holley ECU data log?

When using the 7" dash with a Holley ECU, I assume the accelerometer and I/Os connected to the dash would be included in the ECUs data log?
Is the accelerometer output configured in Gs?
Will those traces be limited to 10 samples per minute?

No, none of the inputs from a the dash will show up on the ECU log. You will need a dedicated G-meter for any useful data also. I have the holley g-meter and it works great.
