Cioppino or fish stew, added some chorizo sausage like a local restaurant does. One of the best dishes I have made.

Recipe

This made 2 good size servings

1 medium onion diced
bell pepper (optional) diced
2-3 stalks celery (optional) diced
Tbsp butter
2 tbsp olive oil

Saute until onions are translucent in a saucepan small enough to cover the fish with soup. I used an 8 inch or so

Add cup thinly sliced and diced chorizo sausage, any spicy dry sausage would work
Saute until fat just starts to render out,

Add spices
3 cloves garlic, minced
tbsp black pepper
tsp salt or to taste, seafood will have a lot of salt
3 tbsp fresh parsley finely chopped
3 tbsp fresh cilantro finely chopped
The rest of the spices killed the sage so do not bother
Would add 3 tbsp fresh basil and oregano though.

Saute until you can smell garlic

Add
2 cups chicken stock

Bring to simmer, simmer until the spices get to know each other as chef John would say, 2-3 minutes

2 tbsp tomato paste
2 cups diced tomatoes

Simmer for 30 minutes

I had
2 haddock fillets
lb shrimp
Halibut might be better and would add mussels if I had them

Add seafood, make sure there is enough broth to cover
Turn heat up and bring to simmer again

Only takes 5-7 minutes to cook the fish,
serve with crusty bread
