Simmer for 30 min-1 hour.
Serve.
That sounds killer! Some of these others........not so much. LOL.

Skoslers is pretty much it for "Texas Red". Basic ingredients, beef, chili powder, garlic, onion, salt, cumin, tomato sauce or paste, broth. I like some kind of greeen chilis like Skos, jalepenos or whatever you have. I don't measure anything either. I like lots of garlic in mine BTW. I like to stir a little Masa in to thicken it, and give it a little corn tortilla flavor for a change of pace. I don't mind chili and beans, except for the after affect.

Thank you. I forgot to add, stir, frequently. My husband sometimes likes me to make cornbread and serve the chile over it, it gives it a whole different flavor. Masa makes a good thickener for many things, in this though, between the flour on the meat and adding potatoes (if you do) makes it pretty thick. I had to stop and think about measurements because I usually eyeball ingredients depending on what I feel like, more meat, more chile, more oregano.. Cooks choice.

We don't have a "go to recipe" just kind of wing it everytime but these are our basics

5 lbs. of ground chuck 80/20
3 quarts homemade tomato juice
1 can beef broth
3 cans of Bushs chili beans (optional)
2 diced Spanish onions
2 cloves minced garlic
1 pack mccormick chili seasoning
2 teaspoons chili powder
1 teaspoon garlic salt
Black pepper amount depends on preference
Couple diced jalapenos
Teaspoon red pepper flake
2 teaspoons sugar to balance acid in tomatoes (you will not taste it)
2 cans diced tomatoes
1 teaspoon ground mustard
(I also put about 2 tablespoons of yellow mustard)
On occasion we put some type of noodle in elbow macaroni or something small like that
Garnish with shredded cheddar when ready to eat

Brown meat with onions and garlic
Add Juice in Kettle, add meat mixture after draining grease, add noodle if you add them in recipe simmer for 30-45 minutes VOILA!

I made a pot Sunday, started it early after breakfast and let it slow simmer all day, basically one of those throw a little bit of everything in the spice rack chili's........ I also put in a good bit of my hot hatch green chile that I grew this summer for some added kick, and one can of beer....., not sure if it was all that or not but the ole lady was gobbling that shit down like it was the best she'd ever had and she don't even really like my chili....lol

Ok, here's what i got 1lb ribeye steak cut bite size, 1 pack publix hot italian sausage one lb bacon. Squeeze the saus out of its casing and brown in a pan with the ribeye. Drain and sit to the side. Discard of oil in pan. Cook bacon in a cake pan in over at 400* till crispy. remove bacon from bacon and crumble half. Eat other half for enrgy . Place bacon fat in crock pot with bacon saus and ribeye. Add two can's diced tomoato's (italian style with garlic and oregano.) 2 cans kidney beans (1 light 1 dark). A diced yellow bell pepper, a small can of ortega diced green chilie peppers. 3 red chilli peppers diced.1 pack publix french onion soup mix mixed in 1 cup water and a splash of milk. 1 small can of tomato paste. And 1 can Coca-Cola ( NOT DIET) Mix it all together in the crock pot on high for 4 hrs. Then leave in keep warm for another 6-8 hrs.

Interesting, what type of red chile peppers did you use? Were they dried?
This has to be the first chili recipe I've ever seen that didn't have chili powder or cumin in it.
