Default 1 st time smoking a turkey

Im gonna try to smoke a turkey on Sunday for my famlies Thanksgiving , any advise ? what temp should the meat be when its done ?
Im gonna thow on a shoulder just in case i mess up the bird, that way we can still eat....lol

im useng a small cooker with a smoke box on the side for the hickory , and im looking for ideas for seasoning and so on

So how did it go?

I see they recommend cooking the bird at 325 in the grill or smoker. That's definately the way to go. Poultry cooked at lower bbq temps will get done but you might as well peel the skin off and throw it away because it will be like a sheet of rubber. "Smoke roasting" the bird is the shit.

Try smoking it using cherry wood (or maybe a mix of cherry and apple). The cherry smoke gives the bird a reddish color and it looks cool.

I'm cooking mine at 275* for just a little longer. I'll have pictures of the smoked turkey and baked one that I'm currently cooking in about 3 hours.

im starting at 6am tomorrow , its gonna be the third Thanksgiving dinner this week ......im getting burned out already , but its always worth it

Thanks man. When they say pull the bird off when the breast hits 160*, thats what they mean. The smoked turkey was Moist and Juicy.

The Baked one is the one my wife cooked and went a little higher on the temp. It wasn't dry but no where as moist as the smoked.
