What all on a motor can be port matched/polished?

as far as i know just the heads and intake.

Exhaust ports to headers
Intake to manifold
Carb spacer to manifold
Throttle body to manifold or elbow

Can you smooth/polish out the valley oil drains (where the rough part of the cast remains)? What about the complete valley surface?

That would be a great thing to do with the block. Never hurts to aid in oil return.... blend the oil return holes generously and if you have the time polish the whole valley.
