Good question.
There are a lot of reasons. Here are a few:
- Appearance. Some people are just going for looks or ride height.
- Fitment. Some can only fit certain sizes for clearance reasons.
- Reaction time. The height can effect reaction times. Shorter = quicker, taller = slower. Instead of trying to adjust "you", the tire can be used to an extent.
- Overall ET. The taller tire lets you take a "run" at the clocks. It takes longer for it to roll out of the staging beam. We are not talking big numbers here, but noticable.
- Rules. Some classes restrict front tire sizes.
- Weight. The bigger tires can weigh more.
Those are the main reasons for the different heights.
Thanks for the question.

A taller front tire will raise ride height and will aid in weight transfer as well.
